The Season is here! The holidays are full of family, friends, fun and…FOOD!

Sure, the first bite of your favorite holiday dish is always delicious, but what happens when leftovers overstay your taste buds’ welcome? Check out these hacks for turning holiday leftovers into “new” dishes that will excite your taste buds a second time around.

Make food safety a priority.

  • Keep hot foods hot (>140 degrees) and cold foods cold (<40 degrees).
  • Be sure to refrigerate leftovers ASAP and divide large containers into smaller, shallow containers to chill more quickly.
  • Perishables left at room temperature over two hours should be discarded.
  • Store leftovers in the refrigerator just 3-4 days or freeze for longer storage.

Holiday Hacks for Leftovers:

  • Move turkey sandwiches to breakfast! On a whole wheat English muffin, layer scrambled egg whites, sliced turkey, smoked mozzarella and tomato slices!
  • Whisk cranberry sauce with olive oil, cider vinegar, Dijon mustard and a sprinkle of salt and pepper for a quick salad dressing. Drizzle over baby spinach, sliced apples and red onion and toasted walnuts.
  • Thin leftover mashed potatoes with low sodium chicken stock and milk to a soup-like consistency. Then layer more flavor by stirring in sautéed garlic, onion, celery or mushrooms and top with a sprinkle of cheddar cheese and chives.
  • Toss leftover corn with black beans, green onion, red bell pepper, cumin, lime juice and a drizzle of olive oil for a Southwest-inspired side dish.
  • Slice pie into mini portions, then tuck into ½ cup canning jars. Freeze for just-right dessert portions.
