Cherry Granita

Refreshing Frozen Drink

Enjoy this frozen treat that requires no special equipment like molds or an ice cream maker.  Cherries are high in antioxidants and the kombucha adds a punch of probiotics for gut health. 

Ingredients

2 cups frozen cherries
1 cup watermelon kombucha
2 Tbsp cup honey
Juice and zest of 1 lime
⅛ tsp salt

Directions

Add all ingredients to a blender and puree. If needed, add a few tablespoons of water until the purée is about the thickness of a smoothie.

Pour the fruit purée into a shallow 9X13 pan for freezing. 

Freeze the granita for 30 to 45 minutes, until it just starts to freeze on the top and sides of the pan.

Scrape the partially frozen granita with the tines of a fork, breaking up any large chunks. Repeat this step two or three times over the course of freezing.

Freeze again before serving. Return the granita pan to the freezer for a total of 4 hours before serving..

Tips:

Place pan in freezer to chill before prepping ingredients

Once frozen, granita can be served alone or with a dollop of whipped cream. You can spoon it over yogurt for breakfast or top freshly grilled watermelon or peaches with the frozen mixture

Pour sparkling water over granita just before serving for quick refreshing beverage.
