Watermelon Tomato Salad

Watermelon and tomato are quintessential summer produce and are full of the antioxidant lycopene, which may improve heart health and lower the risk of certain types of cancer.

Ingredients

2 cups cubed watermelon
1 cup chopped heirloom tomatoes
¼ cup feta cheese, crumbled
1 tsp lime zest
1 tsp lime juice
2 tsp champagne vinegar
3 tsp olive oil
1 tsp finely minced shallot
¼ tsp table salt
Optional herb garnish with tarragon or basil

Directions

For the dressing: Mix lime juice, champagne vinegar, shallot, and salt in small bowl.  Whisk in olive oil and set aside.

 Add watermelon, tomatoes and feta to bowl.  Sprinkle lime zest over.  Drizzle with salad dressing and serve.

Tips: White balsamic vinegar can be substituted for the champagne vinegar.

Per one serving:  85 Calories, 6 mg Cholesterol, 5 g Total Fat, 2 g Saturated Fat, 249 mg Sodium, 8 g Carbohydrate, 1 g Fiber, 2 g Protein
