Watermelon and tomato are quintessential summer produce and are full of the antioxidant lycopene
2 cups cubed watermelon
1 cup chopped heirloom tomatoes
¼ cup feta cheese, crumbled
1 tsp lime zest
1 tsp lime juice
2 tsp champagne vinegar
3 tsp olive oil
1 tsp finely minced shallot
¼ tsp table salt
Optional herb garnish with tarragon or basil
For the dressing: Mix lime juice, champagne vinegar, shallot, and salt in small bowl. Whisk in olive oil and set aside.
Add watermelon, tomatoes and feta to bowl. Sprinkle lime zest over. Drizzle with salad dressing and serve.
Form into patties and place onto a plate. Add oil to large skillet and heat over medium to medium-high heat. Cook the patties for 2-3 minutes on each side until cooked through.
Tips: White balsamic vinegar can be substituted for the champagne vinegar.
